Ingredients:
1 tablespoon extra virgin olive oil
1 shallot, diced (or substitute with an onion)
Salt and pepper, to taste
1-2 cups cherry or grape tomatoes, halved
2 cups orzo pasta
4 cups low sodium chicken stock (or vegetable stock)
1 cup precooked shrimp, cut into bite-size pieces
1 lemon, zested and juiced
Fresh dill, chopped (or other fresh herbs like parsley or basil)
