Ingredients:
– 1 New York strip steak (approximately 1 pound)
– Salt and pepper, to taste
– 2 tablespoons olive oil
– 1 tablespoon butter
– 3 large eggs
– 1-2 tablespoons milk
– 2 slices American cheese
– Chopped chives (optional, for garnish)

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Season the New York strip steak generously with salt and pepper on both sides.
3. Heat a skillet over medium-high heat and add olive oil and butter. Allow the butter to melt.
4. Place the steak in the skillet, fat side down, to render off some fat. Sear the steak on all sides until browned.
5. Transfer the skillet to the preheated oven and cook the steak to your desired level of doneness. Remove from the oven and let it rest for 5-10 minutes before slicing.
6. While the steak is resting, prepare the scrambled eggs. In a bowl, whisk together the eggs, salt, pepper, and milk until well combined and slightly frothy.
7. Melt butter in a separate skillet over medium-low heat. Pour in the egg mixture and cook gently, stirring continuously until the eggs begin to set.
8. Tear the American cheese slices into pieces and add them to the scrambled eggs. Continue cooking and stirring until the cheese is melted and the eggs are creamy.
9. Remove the scrambled eggs from the heat and transfer to a serving bowl to prevent overcooking.
10. Slice the rested steak against the grain into thin strips.
11. Plate the steak slices alongside the cheesy scrambled eggs, garnishing with chopped chives if desired.
