8 oz. cold soba buckwheat noodles
2 tbsp sesame oil
1 carrot, julienned
1 red pepper, julienned
2 scallions, thinly sliced
1/2 cup purple cabbage, shredded
1/4 cup crushed peanuts
2 tbsp cilantro or mint, chopped
For the dressing:
2 limes, juiced
1 garlic clove, minced
1 inch ginger, minced
1 1/2 tbsp toasted sesame oil
2 tbsp soy sauce

Instructions:
In a pot of boiling water, cook the soba noodles according to the package instructions. Drain and rinse under cold water.
